Ingredients:

6 eggs;
200ml coconut milk;
200g heavy cream;
1/2 cup shredded coconut;
Sweetener to taste.

Directions:

  1. Blend all ingredients in a blender until smooth;
  2. Add 1/2 cup shredded coconut;
  3. Caramelize the pudding mold (with diet caramelizing powder);
  4. Pour everything into the caramelized mold;
  5. Bake in a bain-marie at 200°C until firm;
  6. Remove from the mold after cooling.
