Low-Carb Chocolate Cake with Coconut

Chocolate cake ingredients:

  • 1.5 cups almond flour
  • 1/2 cup cocoa powder;
  • Xylitol to taste;
  • 2 eggs;
  • 1/4 cup melted coconut oil;
  • 1/3 cup coconut milk;
  • 2 teaspoons vanilla extract.

Coconut filling ingredients:

  • 1.5 cups unsweetened shredded coconut;
  • Xylitol to taste;
  • 1/3 cup almond flour;
  • 1/4 cup melted coconut oil;
  • 1/4 cup coconut milk;

Chocolate frosting ingredients:

  • 1/2 cup chopped 70% cocoa chocolate;
  • 1/2 cup coconut milk

Chocolate cake preparation:

  1. Combine the coconut oil, eggs, coconut milk, and vanilla extract in a bowl;
  2. Stir well;
  3. Add the almond flour, cocoa, and sweetener;
  4. Stir again until combined;
  5. Spread the batter into a greased pan;
  6. Bake in a preheated oven at 350°F (180°C) for approximately 20 minutes.

Coconut filling preparation:

  1. In a bowl, combine the shredded coconut, flour, and xylitol;
  2. Mix well;
  3. Add the coconut oil and coconut milk;
  4. Mix well until combined;
  5. Freeze for 10 minutes;

Chocolate topping preparation:

  1. Melt the 70% cocoa chocolate over low heat;
  2. When the chocolate is completely melted, add the coconut milk;
  3. Mix until well combined;
  4. Refrigerate until firm.
