Low-Carb Chocolate Cake with Coconut
Chocolate cake ingredients:
- 1.5 cups almond flour
- 1/2 cup cocoa powder;
- Xylitol to taste;
- 2 eggs;
- 1/4 cup melted coconut oil;
- 1/3 cup coconut milk;
- 2 teaspoons vanilla extract.
Coconut filling ingredients:
- 1.5 cups unsweetened shredded coconut;
- Xylitol to taste;
- 1/3 cup almond flour;
- 1/4 cup melted coconut oil;
- 1/4 cup coconut milk;
Chocolate frosting ingredients:
- 1/2 cup chopped 70% cocoa chocolate;
- 1/2 cup coconut milk
Chocolate cake preparation:
- Combine the coconut oil, eggs, coconut milk, and vanilla extract in a bowl;
- Stir well;
- Add the almond flour, cocoa, and sweetener;
- Stir again until combined;
- Spread the batter into a greased pan;
- Bake in a preheated oven at 350°F (180°C) for approximately 20 minutes.
Coconut filling preparation:
- In a bowl, combine the shredded coconut, flour, and xylitol;
- Mix well;
- Add the coconut oil and coconut milk;
- Mix well until combined;
- Freeze for 10 minutes;
Chocolate topping preparation:
- Melt the 70% cocoa chocolate over low heat;
- When the chocolate is completely melted, add the coconut milk;
- Mix until well combined;
- Refrigerate until firm.
