Ingredients:

  • 1 cup grated carrot;
  • 1/2 cup almond flour;
  • 4 large pitted dates;
  • 1/2 cup chopped walnuts;
  • 1 tablespoon flaxseed meal;
  • 2 tablespoons vanilla extract;
  • cinnamon to taste.

Chocolate Topping:

  • 1 tablespoon melted coconut oil;
  • 1/3 cup chopped 70% cocoa chocolate.

Carrot Truffle Preparation:

  1. Add the grated carrot, dates, and vanilla extract to a blender and blend until smooth.
  2. Then add the almond flour, flaxseed flour, walnuts, and cinnamon. Blend again to combine.
  3. Roll the mixture into a ball and place on a baking sheet lined with parchment paper.
  4. Freeze for about 15 minutes to firm up.

Chocolate Topping Preparation:

  1. Melt the dark chocolate over low heat, stirring in the coconut oil for 30 seconds. Stir until smooth.
  2. Wait for the chocolate to cool slightly and dip the truffles in until well coated.
